By popular demand, this week I'm sharing with you a delicious snack ready in just a few minutes which will give you the energy boost you've been looking for: my matcha and pistachio power balls.
Ingredients (for 8 power balls):
100g cashews
1 teaspoon of matcha tea
8 Medjool dates
100g unsalted pistachios
A pinch of salt
Method:
Pulse half of the pistachios in a food processor to turn them into crumbs. Sprinkle them on a cutting board.
Blend all the other ingredients (including the other half of the pistachios) in the food processor until you achieve a sticky mixture.
Using your hands, create 8 balls (if the mixture sticks to your hands, you can lightly wet your fingers).
Roll the balls in the pistachio crumbs.
Chill in the refrigerator for at least an hour before eating.
