Here's a different take on the classic pancakes recipe. These banana pancakes are perfect for brunch and they're particularly tasty topped with maple syrup and fresh fruit, or with almond or hazelnut butter.
Ingredients for 2 people (more or less 4 pancakes):
100g oats
80g ground almonds
2 bananas
200ml plant-based milk (we used almond milk)
2 Tbsp maple syrup (or other sweetener like rice syrup or agave)
2 Tbsp chia seeds
2 tsp cinnamon
1 Tbsp coconut oil
Method:
1. Place the oats in a food processor and pulse until you get a flour-like texture.
2. Place the oat flour in a bowl with the ground almonds, cinnamon and chia seeds. Mix well to remove any lumps.
3. In a plate, mash the bananas with a fork.
4. Add the plant-based milk, the mashed bananas and the maple syrup to the bowl and mix well.
5. Let the mix thicken for 5-10 minutes.
6. Heat a pan and add the coconut oil.
7. Add a tablespoon of the pancake mix to the pan, using the spoon to give it the right shape.
8. Cook the pancakes without touching them for a few minutes and then flip them and cook the other side for a couple more minutes.
9. Serve the pancakes warm.
