Chocolate Chip Cookies (ENG)

These cookies are super quick and easy to prepare. The only issue will be refraining from finishing the whole batch in the first hour!



Ingredients (for approximately 12 cookies):

  • 50g coconut oil

  • 180g coconut sugar (fundamental ingredient of this recipe)

  • 215g flour (I use whole wheat)

  • 120g dairy-free dark chocolate

  • 70ml unsweetened plant-based milk (I use almond or cashew)

  • 2 tsp baking powder

  • Pinch of salt


Method:


1. Preheat the oven at 190°C.

2. Melt the coconut oil over medium/low heat and let it cool.

3. Cut the chocolate into small chunks.

4. In a bowl, mix the coconut sugar, the flour, the baking powder and the salt until there aren't any lumps left.

5. Add the plant-based milk and the coconut oil to the bowl and mix everything together using your hands.

6. Add the chocolate chunks and keep mixing with your hands.

7. Line a baking tray with parchment paper.

8. With your hands, form approximately 12 balls and put them on the baking tray, leaving some space between one ball and the other (because they will expand).

9. Bake for 15 minutes, or until the cookies are golden brown and the chocolate has slightly melted.

10. Remove the baking tray from the oven.

11. Lastly, the hardest part: you have to wait at least 10 minutes before touching them (otherwise they will melt in your hands).




Notes:

If you don't eat the cookies right away, I suggest (if you have the time) to heat them up in the oven 5 minutes before enjoying them!
