Cold Roasted Tomato Soup (ENG)

This soup couldn't be easier to prepare. It's completely plant-based, healthy and delicious!



Ingredients (for 2 servings):

  • 600g cherry tomatoes

  • 1/2 onion

  • Basil to taste

  • Oregano to taste

  • Olive oil to taste

  • Salt to taste

  • Pepper to taste


Method:

1. Preheat the oven at 200°C.

2. Wash the tomatoes and cut them in half. Then, place them on a baking tray with some olive oil, salt, pepper and oregano. Add the onion cut in half.

3. Bake for approximately 30 minutes.

4. Remove from the oven.

5. Mix everything in a blender.

6. Place the soup in the fridge for a couple of hours, until it becomes cold.


Notes:

The quality of the tomatoes is crucial since they're the main ingredient of this recipe.
