This hummus and sun-dried tomato tapenade toast is DELICIOUS. It's super quick and easy to prepare and everyone loves it.
Ingredients (for 4 people):
400g drained chickpeas
2 Tbsp tahini
7 Tbsp olive oil
Juice of 1.5 lemons
Salt to taste
300g pitted green olives
35g sun-dried tomatoes
15g fresh basil
Slices of your favourite bread (I like buckwheat)
Method:
1. Place the drained chickpeas, the tahini, 5 Tbsp of olive oil, the juice of 1 lemon and a pinch of salt in a food processor (or use an immersion blender) and pulse until you get a creamy texture, adding water and oil if needed. That's your hummus (don't add too much salt because the tapenade will be pretty salty).
2. Place the olives, the sun-dried tomatoes, the basil leaves, the juice of half a lemon and 2 Tbsp of olive oil in a food processor (or use an immersion blender) and pulse until you get a creamy texture. That's your sun-dried tomato tapenade.
3. Toast some slices of bread and spread the hummus first and then the sun-dried tomato tapenade.
