Taco Night (ENG)

These tacos are the perfect choice when you have some friends over and don't know what to prepare. They are super quick and easy to make and EVERYONE loves them!

You can choose to serve them with whatever toppings you prefer, but the version with guacamole, black beans and roasted sweet potatoes is amazing!




Ingredients for 4 tacos (these should be enough for 2 people):

  • 100g corn flour

  • 50g chickpea flour

  • 200ml water

  • The juice of ½ a lemon

  • A generous pinch of salt

  • Olive oil

  • 1 lime (optional)


Method:

1. In a bowl, mix the flours, the water, the salt and the lemon juice and whisk everything together.

2. Heat some olive oil in a pan at medium heat.

3. Once warm, pour a spoonful of the mix on the pan and let it cook for 2 or 3 minutes. Flip and cook the other side for a couple of minutes as well.



Recommended toppings:

  • Roasted sweet potatoes

  • Black beans (you can use canned beans, in that case, you'll only need to heat them up)

  • Guacamole



Ingredients for the roasted sweet potatoes (for 2 people):

  • 2 sweet potatoes

  • Olive oil

  • Sea salt


Method:

1. Preheat the oven at 180°C.

2. Peel and cut the sweet potatoes and place them on a baking tray with olive oil and salt and cook for approximately 40 minutes or until golden.





Ingredients for the guacamole (for 2 people):

  • 2 avocados

  • 1 tomato

  • ½ onion

  • The juice of ½ a lemon

  • Fresh coriander to taste (optional)

  • A generous pinch of salt

  • Chili pepper to taste


Method:


1. Cut the onion and the tomato in very small chunks.

2. Mash the avocados with a fork and add the lemon juice, the salt, the chili pepper and (if you like it) the coriander. Add the onion and the tomato as well.



Final steps:


Serve the tacos warm with the guacamole, the black beans and the sweet potatoes. If you want, you can also squeeze some fresh lime on the tacos before enjoying them.



Notes:

Time-wise, you should start by cooking the sweet potatoes, then the guacamole, and finally the tacos (while you heat up the black beans).

To fully  enjoy your dinner, you could prepare the guacamole, sweet potatoes and tacos before dinner and heat the tacos and the sweet potatoes in the oven and warm up the black beans in a small pan at the last minute.
